Quinoa Chakki Atta Dosa

Ingredients

1 cup Cosmic Grain Quinoa Chakki Atta

¼ cup rice flour (for crispness)

½ cup fresh curd

1½ cups water (adjust as needed)

1 small onion, finely chopped (optional)

1 green chilli, finely chopped
-
1 tsp cumin seeds
-
Salt to taste

Oil for cooking
Method

In a mixing bowl, combine quinoa chakki atta and rice flour.

Add curd and water gradually, whisking to form a smooth, pourable batter.

Mix in salt, cumin seeds, green chilli, and onion.

Rest the batter for 15–20 minutes.

Heat a non-stick or cast-iron tawa and lightly grease it.

Pour a ladle of batter and spread gently into a thin circle.

Drizzle oil around the edges and cook on medium heat until golden and crisp.

Flip if needed, cook briefly, and serve hot.
Serving Suggestion
Pairs perfectly with coconut chutney, tomato chutney, or light sambar.
