Bajra & Vegetable one-pot Khichdi

Serves: 2–3 | Time: 25–30 mins

Ingredients
• ½ cup bajra millet khichdi rava
• ¼ cup moong dal
• 1 tbsp ghee
• 1 tsp cumin seeds
• 1 tsp grated ginger
• 1 green chilli (optional)
• Seasonal vegetables (carrot, bottle gourd, pumpkin, beans)
• ¼ tsp turmeric
• Salt to taste
• 3–3½ cups water
• Fresh coriander

Method
Rinse the bajra khichdi rava and moong dal well. Heat ghee and crackle cumin seeds, followed by ginger and chilli. Add vegetables, turmeric, and salt, sauté briefly, then add the rava and dal. Stir gently, add water, and cook until soft and creamy, stirring occasionally. Lightly mash if needed and finish with fresh coriander.

How to Enjoy
Serve warm with curd, a drizzle of ghee, and lemon pickle.
