Browntop Millet Vegetable Pulao

Ingredients

  • 1 cup Cosmic Grain Browntop Millet Grain

  • 2½ cups water

  • 1 tbsp cold-pressed oil or ghee

  • 1 tsp cumin seeds

  • 1 bay leaf

  • 1 small onion, thinly sliced

  • 1 tsp ginger-garlic paste

  • ½ cup carrots, diced

  • ½ cup beans, chopped

  • ¼ cup green peas

  • 1 green chilli (optional)

  • ½ tsp turmeric powder

  • 1 tsp coriander powder

  • Salt to taste

  • Fresh coriander for garnish

Method

  1. Soak browntop millet grains for 6–8 hours. Rinse and drain well.

  2. Heat oil/ghee in a pressure cooker or heavy-bottom pot. Add cumin seeds and bay leaf.

  3. Add onions and sauté until soft and lightly golden.

  4. Add ginger-garlic paste and green chilli; sauté till aromatic.

  5. Add all vegetables, turmeric, coriander powder, and salt. Mix well.

  6. Add soaked browntop millet grains and sauté for 1–2 minutes.

  7. Pour in water, mix, and cook:

    • Pressure cooker: 2 whistles on medium heat

    • Pot method: Cover and cook for 20–25 minutes till grains are soft

  8. Rest for 5 minutes. Fluff gently with a fork.

  9. Garnish with fresh coriander and serve warm.
