Browntop Millet Vegetable Pulao

Ingredients

1 cup Cosmic Grain Browntop Millet Grain

2½ cups water
-
1 tbsp cold-pressed oil or ghee
-
1 tsp cumin seeds
-
1 bay leaf
-
1 small onion, thinly sliced
-
1 tsp ginger-garlic paste
-
½ cup carrots, diced
-
½ cup beans, chopped
-
¼ cup green peas
-
1 green chilli (optional)
-
½ tsp turmeric powder
-
1 tsp coriander powder
-
Salt to taste
-
Fresh coriander for garnish
Method

Soak browntop millet grains for 6–8 hours. Rinse and drain well.

Heat oil/ghee in a pressure cooker or heavy-bottom pot. Add cumin seeds and bay leaf.

Add onions and sauté until soft and lightly golden.

Add ginger-garlic paste and green chilli; sauté till aromatic.

Add all vegetables, turmeric, coriander powder, and salt. Mix well.

Add soaked browntop millet grains and sauté for 1–2 minutes.

Pour in water, mix, and cook:

Pressure cooker: 2 whistles on medium heat

Pot method: Cover and cook for 20–25 minutes till grains are soft

Rest for 5 minutes. Fluff gently with a fork.

Garnish with fresh coriander and serve warm.
